Elderflower Collins
Elderflower Collins

The Elderflower is blooming at Earth at Hidden Pond, which is making everything smell sweetly delicious. This flower is used to ease sinus and upper respiratory inflammation as well as in a tea to burn off a fever. But the most delightful use may be this Elderflower Collins, which Cassandra whipped up in the garden for her cocktail class.

Mash 3 strawberries and cucumbers in pint glass with Barr Hill gin

Squeeze the juice of half of a lemon into glass

Add Chamomile Bitters

Add ½ oz Elderflower-Honey Cordial

Shake with ice

Strain and top with soda

Garnish with Elderflower, Cucumber, Strawberry
